Feel Better Miso

This is a tried-and-true recipe around my house. Anytime I start to feel the sickness coming on, I whip up a batch and this and kick it’s butt.

Ingredients:

-1 1/2 cups green peas
-1 1/2 cups broccoli
-1 tablespoon sesame oil
-4 tablespoons soy sauce
-1 medium yellow onion
-6-8 cloves fresh garlic
-3-4 inch piece fresh ginger
-2 shitake mushrooms
-1 teaspoon garlic
- miso paste
-4 cups water
-4 tablespoons cooking oil of choice

Chop the onion and garlic. Peel and either chop or grate the ginger. Heat the cooking oil and saute the onions about 3-4 minutes. Add garlic and saute about 2-3 more minutes over low heat. Add water and turn heat to medium. Add ginger, cumin, soy sauce, and sesame oil. You can add the mushrooms now if you like more mushroom flavor or wait until closer to the end.

Simmer covered for 5 minutes to bring out the juices of the ginger and garlic and good stuff. Add the broccoli and peas and mushrooms if you haven’t already and simmer until veggies are done to your liking, about 5-8 minutes usually.

Scoop some of the soup into a bowl and dissolve 1 tablespoon miso per serving into it. (It’s important to avoid cooking the miso…it looses it’s immunity-boosting benefits that way.)
